Ingredients
<Ice-cream or Milkshake>
1 1/2 large frozen bananas (slightly thawed)
Extra:1/2 c-1 cup low fat milk or soy milk (if you want to make it into a milkshake)
Extra: 1 packet of Stevia (as a natural sweetener)
<Cookie Dough>
1 tsp vanilla extract
2 tbsp coconut oil
2/3c cashews
1/2c rolled oats
1/3 cup almond meal
5 pitted medjool dated
1 tsp kosher salt
3-5 tbsp Blue Agave (or maple syrup or honey)
3 tbsp coconut (finely shredded and unsweetened
1/2 tsp cinnamon
1/3 c dark chocolate chips
Directions
1. Let the frozen bananas thaw for 30 minutes to soften slightly.
2. Put all cookie dough ingredients except the chocolate chips into the blender. Blend well for a few minutes until the mixture looks like dough. Scrape out of blender, put into a bowl, and compress with a spoon.
2. Then add frozen bananas (add a little soy milk or low fat milk for a milkshake). You don't have to clean the blender since the cookie dough mixture will be going into the ice-cream anyways. After blending for a few minutes, put the ice-cream into another bowl.
3. Using a spoon, make little balls out of the cookie dough mixture. Place those cookie dough balls into your ice-cream, then add in the chocolate chips.
4. Eat immediately or put into the freezer if you want the cookie dough to be more compact.
